This dish has become even more famous since famous chef Gordon Ramsay went viral in cooking rendang accompanied by Indonesian culinary expert, William Wongso. Ramsay cooked on the National Geographic Uncharted program, which aired last Monday (29/6/2020).
Usually dry rendang is typical of Minangkabau or Padang rendang. Their rendang is pitch black, dry and oily. While the recipe for Javanese meat, the meat is wet. Their rendang is slightly browned and the meat still seems tough. Tips for cooking soft rendang are actually cooked not over high heat. Cook over low heat for a few hours. For dry rendang, cook the rendang for 5-6 hours. For wet rendang, cook for about 4 hours.

1 kg of beef
3 coconuts, thick coconut milk and thin coconut milk are taken
4 pieces of lime leaves
3 stalks of lemongrass, bruised
4 grains of kandis acid
100 ml cooking oil
5 grams of salt
1 Kg beef rendang seasoning:
60 grams of shallots
50 grams of garlic
250 grams of large red chilies
100 grams of galangal
50 grams of hazelnut
2 grams of cloves
How to make :
Blend all the seasoning ingredients by pulverizing or blending.
Saute the spices with a little cooking oil until fragrant.
Add the lemongrass stalks, lime leaves, kandis acid and salt, mix well.
Pour coconut milk and bring to a boil, add meat.
Cook over low heat for a few hours until the meat is tender and the spices are browned to your liking.
